After years of landscape photography, I'm paying now interest in portrait
photography, e.g. in wedding photography.
Photographing with a 70-200/2.8 lens, what are the best apertures (at each
focal lenght) to obtain a perfect portrait (e.g. upper half of the bodies)?

I love portraits in which all parts of the subject are perfectly in focus,
with a confused background, but I would like to avoid to leave out of focus
parts of the faces (e.g. ears or hairs)
