Ios and Android devices using Google Maps are incapable of mimicking the desktop interface, so no you can’t do that. The only option you have is to select a route and amend it by clicking on the three little dots next to ‘your location’ and ‘add stop’ that will allow you to select a new ‘waypoint’ and so allowing you to modify the route. It may take some time :-)
