Have you added or removed any printer drivers? Color wouldn't make much sense anyway, if only monochrome printers are installed. You may need to select a specific printer before opening the print preview server to change the behavior. Possibly reloading the driver for the actual color printer you want to print with might help, I've heard of people having success with that.
