Ijazah Koki memang terlupakan di STCW2010 tetapi diatur oleh MLC2006.
Ini saya kutipkan aturan yg sdh keluar dari Marshall Isl. sebagai acuan:

6.14 Certification for Cook
(in accordance with MLC, 2006)
6.14.1 General Requirements
.1 MLC, 2006 (Ref. Standard A3.2 & Guideline B3.2)
Seafarers who are engaged as ships' cooks must be trained, qualified and found 
competent for the position.
.2 Age and Seatime
Applicants must be not less than 18 years of age with a minimum of 12 months 
seagoing service.
.3 Medical
Applicants must be certified by the medical examiner to be free of communicable 
diseases.
.4 Training
Applicants must have successfully completed a legitimate training course or 
program covering practical cookery and food preparation, food and personal 
hygiene, galley sanitation, nutrition, food storage, stock control, 
environmental 
protection and catering health and safety.
6.14.2 Certificate
A Cook Certificate may be issued to a seafarer of 18 years of age or older who 
has 
successfully completed a legitimate training course or program, qualified and 
is found 
competent for the position.Rev. 2/12 16 of 24 7-047-1
Republic of the Marshall Islands
6.14.3 Documentation of Qualifications
SQCs issued by the Administrator to certify these qualifications will be 
optional. 
However, vessels are required to have on board documentation attesting to the 
satisfactory training and qualifications of the Cook or Cooks serving on board.

Sertifikat Koki di Indonesia:

Mengacu ke C069 - Certification of Ships' Cooks Convention, 1946 (No. 69). Ini 
salah satu ILO convetion yg sdh kita ratifikasi.
Hanya saja pelaksanaannya baru sekitar tahun 2007(?) berdasarkan skb 3 mentri. 
1/Perhubungan 2/Naker dan 3/DikNas.

Keluarlah sert koki utk kapal yg bernaung ke LSP Maritim. Ada tiga tingkatan 1/ 
Galley Boy 2/Second Cook dan 3/Chief Cook.

Informasi terakhir yg sy tahu. Untuk mendapatkan Cert Chief Cook, koki 
pengalaman tinggal daftar utk langsung ujian. Biayanya sekitar rp3juta. 
Pelaksanaannya 1 hari.

Yang berminat bisa mendapatkan infonya di LSP MARITIM yg berkantor sama dgn 
POSEIDON TRAINING CENTRE atau di STIMAR AMI PULO MAS.

Selain sertifikat Chief Cook biasanya ditanyakan juga FOOD HANDLING CERT.
