Great quote, and it reminded me of when you combined it with another to make the
grilled green cheese and ham or whatever. 

'Economists' love to talk about 'scarcity', but cannot seem to understand
scarcity when jobs are scarce, money is scarce, demand is scarce, income is
scarce, when it matters most.
