Which OS (in Linux ulogd and/or tcpdump spring to mind), do
you need it captured real-time or would batch-processing on
the full-hour or end of day suit  you just fine?

ethereal (packet sniffer) is multiplatform and scriptable, and afaict
is pretty much the best free option out there.
