Since we are pretty far into 8.0 now, I'd say it's time to move forward. Most smaller projects would probably not even notice the switch to 8.0 and the bigger ones, such as Roxen, have already done the switch.
Others may disagree, but I would say it's perfectly fine to drop 7.8 and only ship 8.0.
