This may not be exhaustive, but I do not think Pitivi need an endless list of profiles. Beginners need basic profiles with intuitive names, and the others will build their own. I also corrected some weird stuff in the existing profiles. I heard things would change about rendering profiles, who can tell me more about that? Encoders defaults settings can be improved, are they set somewhere in Pitivi or is it directly gstreamer defaults? Last question, Who made the GUI for the encoders settings?
