The same happened to me. After upgrade to squeeze and evolution 2.30.3-5 it hangs always just after start it up.
At last, I've solved it uninstalling Network Manager (network-manager and network-manager-gnome packages). I don't use Network Manager because I have virtual machines and I've got bridges so I don't need those packages. After removing those packages evolution starts like a charm and it works perfectly so I think the bug has something related with network manager.
