That's because your package is not respecting dpg-buildflags(1) (also as warned by bls[1]. You need to build with -g to get debug symbol and your package is not building with that flag; also please don't inject that flag only, but have your package respect all of the common build flags as exported by dpkg, and only if needed tweak them by acting on the DEB_BUILD_MAINT_OPTION variable as documented in dpkg-buildflags(1).
