My approach would be to maintain notes for Speech100, Journalism100,
Psych100 (or whatever) in separate project pages.

I'm not 100% sure but I think the notes on a project page can be accumulated
either chronologically (which is how I have it set up), or the reverse so
that the latest note is at the top in a blog-like fashion.  Or perhaps that
was only offered under emacs-wiki, or I'm dreaming?

In any case, when you want to find the notes for Speech100 on April 1, 2008,
open Speech100.muse and Isearch to 2008.04.01.

Would that work for you?
