Those older boxes will be perfect candidates for a thin-client setup.
You don't need to have a dedicated server to start playing with ThinTUX.
A DHCP + TFTP server won't be too resource intensive, and you can use
ThinTUX as long as you have one DHCP + TFTP server on your network.

You may want to experiment with setting up all your fat workstations to
be XDMCP servers -- you do this by configuring the desktop manager [XDM,
KDM, GDM, et al] to respond to XDMCP requests. You can then configure
each old computer to have one other workstation to serve as its server.
This way, you don't centralize the processing and network loads, and yet
you can significantly increase the number of seats you can accomodate.
