I used to think it was outrageous to do that, but a good friend who owns a hosting company told me he has been doing that on a VMware GSX for quite some time. The only small issue that he has encountered is that if two or more guest VM's have high CPU utilization, then the time drifts on all the guest VM's... even if the host OS date is fine. That was fixed by running ntpdate on each guest. Just to let others know if they want to implement it.
