have you tried burning to a different media? sometimes its a burn/cd problem why ubuntu won't install properly.  have you considered gentoo? www.gentoo.org is a metadistribution that you can optimize to the machine you use and customize it to meet any application or need and not to mention a good way to learn about linux.  the minimal cd is only 40mb ;) the livecd is 700mb though but it has a graphical step-by-step install.
