The 1000baseT spec only calls for Cat5, so 5e is more than fine. If you're using 1000baseTX on the other hand Cat6 is specified, although likely would work fine for short runs, FSVO "short". It would seem 1000baseTX lost the gigabit ethernet war (similar to Betamax vs. VHS) so odds are you're using 1000baseT.
