I don't know which normal versions you are talking about, but I always install Debian using netinst. http://www.debian.org/CD/netinst/ At some point during the installation it asks you which type of system you are installing and you just uncheck everything. What you get is a very small installation that will boot to a console. >From there you can install things as you need them.
