Online docs on PLex shows only MP4 container [no mkv]. Hauppauge USB2 is an OTA recorder. If you are getting "very good" atsc file recording could also strip out the Close-Captions with ccextractor to a SRT file merge back ffmpeg to x264 MP4 file.
