How about:
1. booting into single user mode.
2. rename /var/log into /var/log_old
3. make a new /some_big_harddisk/log directory
4. cp contents of /var/log_old to /some_big_harddisk/log
5. softlink /var/log --> /some_big_harddisk/log
6. reboot back into multi-user mode
No need to erase the log files (unless you want to archive them)
