I highly recommend your "advisees" (are you their thesis adviser or something?) check out Mailman to find out how they can write a generic anonymizer. Mailman has an option where sender information is removed (From, Sender, X-Sender headers) and replaced with the list administrator's address. This covers the actual header munging work.
