is this doable with as little pain as possible? i seem to recall reading about some app that can do it, also there are Outlook .PST to mbox converters, but i'm talking about the Exchange mail store itself, not per-client mailboxes.
Does Exchange allow POP3/IMAP access?
If I had to do this, I'd just use fetchmail or a similar program to retrieve the messages. Your local MTA could then deliver them to whatever format mailbox you like.
