It is possible.. i have a pop.domain.com (incoming mail) and a smtp.domain.com (outgong mail). this are 2 separate servers. The reason for which is on both server runs other different services and separating it help to load balance the traffic.

For the webmail service, it runs on the pop server. Sending email through webmail uses the local outgoing smtp , but only allowing the local to relay mails.
