I'm a qmail fan so here it goes: 

Install qmail with some filtering mechanisms like greylisting, spf,
etc.  A lot of spam/content filtering techniques are available on
their website (http://www.qmail.org). Next, configure smtp routing.
/var/qmail/control/smtproutes

domain:address.of.mail.server

or 

domain:[ip.add.re.ss]

No need for local deliveries so leave /var/qmail/control/local blank.
