Okay, I was looking too high up the page.
$ enscript --word-wrap DOCUMENTATION.md --output documentation.pdf && ps2pdf

Double-check your command line.
It did't copy completely.
It might be easier to just use your browser to print the Github page for
DOCUMENTATION.md.
That's what I did. Long lines of code were truncated.
Now I'm copying from the web page into LyX, then I'll typeset it using
pdflatex.
