Hmmm I think the plugin won't disable once it's started. (which is not
the correct behaviour!)
If it's disabled it will only deactivate once SlimServer is restarted.
This would explain your continuing pauses, but not the lack of log
messages.

Can you re-enable the plugin and check the iTunes Update 'write messages
to log' option under server settings->plugins is 'on' (this is the
default), restart SlimServer, then play some music and check the log
again.

I guess with the default settings you don't get any messages in the log
until the plugin writes any, 
but it should do some logging if any players are connected and it's
enabled.

How are you starting SlimServer?
