When I look at the thumbnail images against each of the song tracks, it
all looks great, but when I actually click on a song or album, and the
screen switches to the actual track, it plays perfectly BUT the album
art doesn't show at all.
There was a problem with the cache in 1.1.0. What version are you using?
What UI are you using? Just the players? Could you try one of the others
(web UI, mobile app etc.)?
Could you please check the server.log file for any hint about the issue?
