I've just searched in the code to confirm - and there is no hard-coded mention of Composers or Conductors, so they are not coming from any hard-coding. The stated list is hard coded. The extra modes that will be listed within Material's -More- setting come from the -Additional Browse Mode- setting - as defined in the main webUI under Settings / Advanced / Additional Browse Modes.
