OK. I'm still not 100% convinced Material is 100% to blame, but I have implemented a work-around that seems to resolve the issue.
Please update your LMS to today's build. This issue should be fixed (fingers crossed - you never know with those kinds of encoding issues :-().
cpd - if the fix works for you I'd suggest you revert your workaround. You shouldn't pollute your code with them if there's a fix...
