The solution is to turn on logging in AirPlay bridge ... and then it sends the output to a file. So - rather than having it going to a real file (and in pCP I guess this would mean potentially running out of memory if file size limit is not set) then I disabled logging in the plugin and instead added -f /dev/null in the additional parameters for startup of the bridge. Seems to work well. Of course, this means that I do not get logging to see but easy to change if needed to diagnose something that is repeatable.
