I think change "should" to "would very much like to". It may well be that AirPlay to Apple Tv to AirPlay Stereo requires a feature of AirPlay 2. To get around it (and have potentially redundant players in the LMS UI) create an LMS Dynamic Group called HomePods and put the 2 HomePod devices in it and then play to that new group (which is also a plugin from Philippe).
