I think the Genres/SubGenre menu template currently is missing the options to have a "Various Artists" entry, as you already have seen it shows all artists directly in the list.
I'll add it to the list of things to look at in future releases. If you can't wait and have some XML and SQL knowledge, you can always customize the XML of the Genres/SubGenres menu yourself. Generally Custom Browse currently don't look at any of the SqueezeCenter preferences (with a few exceptions), the reason is to make it possible to customize each menu exactly as you like.
