I'm not sure if iTunes Update has its own user interface on the Controller but if you install TrackStat you should get a Rating menu in the track details and if you change a rating through this menu iTunes Update should pick it up and change the rating in iTunes. This only works for setting ratings, the TrackStat menu will only show ratings available in the Squeezebox Server database.
