This sounds similar to the troubles I was having a few weeks/months ago, just after I upgraded my vortexbox and installed Shairport. All of a sudden my whole set up started acting very strange, players were not detected and so on. Allthough I never figured out what was going on I did noticed that several instances of the squeezeboxserver was running on my machine, and I suspected that was the problem (I really don't know, it is just a guess). Maybe the shairport plugin fails in some way that makes the squeezeboxserver process fork itself? (again total speculation on my part). Anyway I completely fixed the problem by reinstalling the server without reinstalling the shairport plugin. I just wanted to apologies that I never gave any feedback. I got super busy at work and just didn't have time to play around with it. I am not really experiencing the crashes anymore.
