I was able to do this.  I can't remember all the steps, but the
hardest part was cross-compiling all the dependencies.  I struggled
with this for a while, but, eventually, I found that the XBMC project
has an iOS version that is already setup to compile most/all the
dependencies for the iOS platform.  You can find that project here:

Sorry I can't remember all the details, but if you start poking around
in that project, you should be able to figure it out.  Good luck!
