I have already a line like that but I was not sure if the user can
overwrite this setting by providing a from-address in the email body
itself. But it looks quite promising, thanks for all your replies!

if you use apache you could add this to your virtual hosts:
php_admin_value sendmail_path "/usr/sbin/sendmail -t -i -f
[EMAIL PROTECTED] <mailto:[EMAIL PROTECTED]> "
then you have something to filter for.. (with confixx you can add this
automatically (special-entry))
