I think you cannot do this in polipo only. AFAIK, if you setup your browser to use a HTTP proxy, all connection will be forward to the proxy. However, I think you are looking for PAC files. Note PAC config is in browser not proxy software(polipo). PAC file is written in javascript and it can direct browser which proxy should be used for a particular website or IP address range.
