Polymer is a client-side library so the choice of server tech doesnt matter. Most (all?) of the source code is on Github and the links are plastered all throughout the documentation. There are also a number of articles linked directly from the docs http://www.polymer-project.org/articles/ and there are a number of videos, think its about 20 of them, several around the 30-45 minute mark, so plenty of info on what Polymer is, what problems it solves, how it attempts to solve them, and, probably most critically, how you can make use of those solutions.
