Where are the restored queue files?

They should be in
/var/spool/postfix-gy/deferred/
and the defer logs should be in
/var/spool/postfix-gy/defer/

Yes.

No. You need to make sure that file ownership and permissions are
compatible, between the source and destination. Also run "postsuper"
*before* starting Postfix. Starting Postfix does "postsuper -s" for
you.
