Client applications using the Java libraries are not subject to the GPL, they are subject to the LGPL, so you can link to the JDBC client and still use the code in a proprietary application. If you make change to the JDBC code itself, those changes must be shared, but that requirement is only for the changed PostGIS code, not for your own client code.
