Personally, I'd recommend 7.6.1. Its light, and can do most of the stuff
that 8 can, just install the Appearance SDK and the CFM-68K. Internet
Explorer 4.01 is still available at the well hidden:

I'd recommend iCab, but quite frankly, I've had nothing but problems with it
recently.
Eudora might be good as a mail client, but I have not used it since the 1.x
days.
