On a 5300 with that much RAM, there probably wouldn't be a hugely noticable 
difference. Due to there being more PPC code in 8.1 it's conceivable that 
8.1 might be faster.

On the other hand, if nothing you need specifically needs 8.1, you might 
give the 7's a try and see if they suit your need. It's an unfortunate 
byproduct of the Wintel world that people get it in their heads that they 
need the latest and greatest all the time when something that suits their 
needs is available free (If Microsoft were as nice as Apple, Windows 3.1 
and maybe even 95 would be available as free downloads).
