I use MacGPS Pro from James Associates, which allows the use of
raster or vector maps, is well-documented, runs on an SE (although
grayscale or color is much nicer), and requires only a serial port
and the appropriate cable to your GPS unit.

James Associates sends me updates and new as promised, and this
well-designed sharewrae is well-worth the low purchse price for the
Pro version. You can DL a lite version (no strings) for evaluation. I
checked out Gpsy, NaviMaq and others, but found this to be the best
bang for the dollar, particularly on an older Mac (who's going to
take their Titanium out in a boat, anyway?).
