Brian,
Hold down the c key as you power on to boot off the CD, as long as you copy you shouldn't have any problems, but don't understand why you're doing the intermediate transfer.

I'm copying my old 2 gig drive to my G3 now, as it was exactly the way I wanted it. If I format the new drive can I simply copy the old one back to it and continue or are there settings that wouldn't work? Thanks.
