It is a very similar story to current 56k modems. Hardware vs. Software.

SCSI included extra chips to off load some of the processing for 
finding/accessing files on the disk. The bus speed was always a step ahead 
of IDE as well. (ex. IDE= 33MB peak throughput, SCSI= 40MB consistent 
throughput.)

IDE usually had fewer chips and required the computer's CPU to do most of 
it's processing.

Therefore SCSI was used on servers to free up as much CPU as possible for 
other processor intensive tasks. This difference has disappeared with the 
speed of computers and most consumers don't want to spend that kind of 
money. Doing video capture to SCSI drives versus IDE should show a 
significant difference in CPU usage. (no compreesion of course.)
