That is a tricky secret. Open your address book. [Window Menu]. Now Go to
View, Options and you will see view options for the address book, include
last name column. Then under preferences you can check sort by last name
and it will work.

The only way I know to do this is to put these people in your Apple
address book. They will go IN there, but I've never actually tried to
send a mail using the Apple address book.
