I can't help with image/paper placement - but perhaps with appearance.
Your profiles don't work with a change of driver! This used to happen
in some early OS 9 drivers, I guess Epson were <improving> things. It's
not happened for an age here, though. I see profiles made in OS9
working fine in OSX, as long as the settings are identical. Not tried
the 2100 though - and many say it has driver alteration issues between
X and 9.
If you think that's bad I'm told you can't turn off auto
colourmanagement in Win Canon 9000 drivers except on XP!
back to OSX:
With some Epson drivers in OSX there are apparently problems recalling
user created Printer presets: ie papertype, resolution etc. and what
Epson call <colourmanagement> settings.
There is a way to do it, but it's tedious. It is imperative, of course,
that a printer driver is using the same settings for printing as those
used when printing out the profiling testcharts. Please write them
down.
Although you may have saved a <preset> in the print driver it's also
worth checking that the options are actually being recalled when you
select it.
Note that it's imperative to ensure the printer is selected in the
<page setup> menu before proceeding in the print preview dialog, mac
users will see a <page setup> button there.
Those with multiple printers installed (OSX) may have already
discovered that when you've pressed <print> - and get to the small
<print> dialog you may have to select the printer again [setting as
default in the print center CAN assist here].
Anyway, in the the small <print> dialog box, it is imperative to select
the printer first THEN recall the preset from the pulldown. If the
printer preset was already visible before selecting the printer by
name, it is necessary to select <standard>, release the mouse, then
reselect your preset.
Note that when saving presets you need to add the printer number to the
name since all presets are [apparently] available to all printers. I
wrote [apparently] because although you see them listed there they
don't recall anything for a printer other than the one for which they
made.
Maybe it'll be better in OSX Panther? OSX was a completely new printing
architecture so problems for manufacturers drivers are inevitable, but
really should have been fixed by now.

this plainly has implications even for Epson's own profiles. maybe they
bypass issues by not using <nocoloradjustment. though. As above, I have
not seen this one. You'd want to rule out the [settings] issues I mentioned.
