Simon, you can't make a profile show up in this location, only a proof
setup! The profiles should be places in your ColorSync profiles folder
(System Folder > ColorSYnc Profiles on OS 9 or Library > ColorSync >
Profiles on OS X). There are other possibilities on OS X as well).

To make a proof setup you go to View > Proof Setup > Custom and select the
profile you want to use for soft-proofing, along with rendering intent, CMM
and the other options. Then you save this proof setup into :

MAC OS 9: System folder > Application support > Adobe > Color > Proofing
 OS X: User > Library > Application support > Adobe > Color > Proofing
 Win: C > Program Files > Common Files > Adobe > Color > Proofing (I'm not
entirely sure about the Win placement but it's close at least - the other
twoI'm sure of).

After saving your proof setup in this location - and naming it appropriate,
you can navigate to this setting bu going View > Proof Setup and select the
names setup at the bottom of the pop-up list.
