I was under the impression that 16 bit is equal to 65,532 levels of grey per
channel.

Nit picking aside you are correct in what you say. It seems to me that the
point being missed is that 16bit is the sampling rate and has no bearing on
dynamic range. Even 1 bit sampling would have the same dynamic range - that
is black or white, on or off. Up the sample rate and you are just providing
more information in between, not making black any blacker, or white any
whiter.
