Dear Bob

You know the jpegs come embedded as part of your RAW file, although You may
choose to not have it in some cameras (like your 1Ds) , in which case you
have no choice but to process  all  RAW's in the background in C1 and then
discard the rejects and keep working on your selects, particularly painful
if you are obtaining 16 bits files.
 iView would attempt to build a preview from the RAW data, but obviously
this takes much longer, circumventing the speed factor gained with jpegs.

So It is easier and faster to work with the jpegs just for editing purposes,
( remember that even the Canon software allows the jpeg "extraction" feature
,again, to work faster in "editing mode" in other apps), you can rename and
tag( and /or copy, move,caption etc) your selected/edited files, and finally
process only those you already previewed and approved.
  Now, when you have an open catalog in iView and send a preview file to the
trash, the original RAW file also goes as well, so the "cleaning" does not
require but one single step. Same thing for renaming, and all other Finder
Ops you may think of.

I guess your current choice might depends on both the computer power you
have available( plus storage etc) and the effectiveness of your shooting ,
which in turn depends on subject matter.
Shooting people may be more inefficient than shooting landscapes or still
life, so I have to choose the jpeg  preview road, and check , say, some 200
files to edit down to just some 20 selects, in a 10 to 1 ratio, sometimes
worse.
 Perhaps it is not a big deal for your work as well as it may not be for
others and full blown files  from entire shootings processed in C1 are just
fine.
