I ran into the same issue. According to a friend of mine that does a lot of this type of work (corporate presentations on DVD) he says that its a limit in the DVD spec as far as how many images can be in one folder, its not a limitation unique to iDVD. Using more sophisticated tools like DVD Studio Pro you can get around this by linking the last slide in one folder to the first slide in another. My crude method using iDVD was to make a slide at a convenient stopping point that instructed the viewer to hit the menu key where they choose another folder of slides (less than 100). If you're trying to present a group of more than 100 slides timed to music, assemble it in iMovie and then put the entire show as a quicktime movie onto the DVD. If you want the viewer to be able to manually click through the slides at any pace then I think you're stuck with one of the alternatives above.
