I would personally now use either tape or DVD RW for incremental backups perhaps running overnight. Tape would be faster than DVD. Remember you don't expect to recover data on a daily basis.

I also have a Raid mirroring system but in addition use a Maxtor External (USB or firewire) hard drive that can do incremental or complete back up of my hard drives. In addition, Any key image files are also backed up on two CDs (kept in different locations).
